CHICKEN SALAD - SERVES 4
1 skinless, boneless, chicken breast
6 oz of Yoshida's Gourmet Sauce
6 c Romaine lettuce, chopped
6 oz French bread, cubed
3 T fat-free Italian dressing
Olive oil nonstick spray
Marinate chicken breast in sauce for 30 –
40 minutes. Grill chicken breast about 10 minutes, turning to brown
both sides. Remove chicken, slice thin and cube.
Make croutons: spray bread lightly with nonstick
olive oil spray, sprinkle with seasonings and toast in non-stick
skillet until brown. Combine lettuce, chicken, dressing and croutons
in a bowl and toss.
